Hi Liz - if the oatmeal cookie is made with steel-cut oatmeal, it is more digestible and won't cause blood sugar spikes. When I was wearing the blood glucose monitor for Zoe Nutrition, my blood sugar was level throughout the day eating my normal way. As an experiment, I ate a "healthy" bowl at our local restaurant that's owned by a Swiss family. It was muesli (rolled oats) and dried fruits/nuts, plain yogurt, and fruit on top. With this, I ate their provided roll and a small amount of jam. Within 20 min - bam! my blood sugar shot up to 190. Then it crashed and I felt tired. Rolled oats or "instant oatmeal" are quickly digested into glucose in the body. I'd been eating regular oatmeal every night for days - no extra sugar, just fruit. Little did I know ... as soon as I stopped that I dropped 8 lbs. Food processing like rolling the oats is like predigesting it. So, something made of actual whole grains, plus fruit & sugar (honey, whatever) won't cause blood sugar spikes. But regular oatmeal? Absolutely - it might as well be sugar mush with or without sweetener. Same is true of soft breads. I'm still researching the effects of different sweeteners. Do not know about Stevia ... but sucralose (Splenda) is a NO. All the detriments of sugar, none of the benefits.
